Megrim, also known as Cornish sole, is a deep water flatfish, which is becoming more popular in choice due to it's sustainability.
Low in fat and lean protein, this makes an ideal all-round fish which can be simply cooked and seasoned for a variety of meals. Delicious poached in milk or made into fishcakes.
